COFFEE EXTRACT PROCESS

FOOD SAFETY & PROCESS VALIDATION
New Ground Coffee

The Project

New Ground Coffee engaged Foodscope to conduct a comprehensive food safety review of their proposed coffee processing operations. The client planned to manufacture concentrated coffee ingredients for contract packaging into multiple formats. New Ground required food safety certification for operations producing a processed product with an 8-month shelf life. This necessitated validation of their food safety protocols and thermal processing requirements.

Our Approach

Foodscope conducted a detailed assessment of New Ground's supply chain. Our evaluation covered the coffee extraction process, cooling protocols, packaging specifications, and regulatory compliance requirements. We reviewed hazard management systems including physical, chemical, and biological controls, whilst assessing the suitability of proposed contract packers for thermal processing requirements.

Results Achieved

Successfully identified process gaps and provided recommendations for process improvements including cooling protocols, procedures and documentation. New Ground was then able to implement these operational changes to achieve their required NP3 food safety certification.
